Bodegas Alvear
Bodegas Alvear is one of Spain’s most storied wine estates — a house founded in 1729 in the heart of Montilla-Moriles, and still owned by the Alvear family after nearly three centuries. As one of the oldest family-run wineries in the country, Alvear is a guardian of tradition and a master of a very particular form of brilliance: the sunlit, flor-draped, chalk-infused wines made from Pedro Ximénez, grown not in Jerez, but further inland, where the limestone runs even deeper and the expression is unmistakably pure.
Unlike Sherry, which relies on fortification, Montilla wines — particularly the dry styles — are made entirely from naturally high-sugar Pedro Ximénez grapes, allowing for high alcohol and complexity without fortifying spirits. The estate’s chalky albariza soils in the Sierra de Montilla region are ideal for this variety, yielding wines of texture, finesse, and subtle saline depth. Alvear controls over 300 hectares of estate vineyards and works with trusted growers, many of whom have supplied the family for generations.
In the bodega, Alvear employs the solera system, using old American oak barrels and slow oxidative ageing to shape wines of exceptional elegance and length. Dry wines like Fino are aged under flor, while Amontillado, Oloroso, and Palo Cortado undergo long oxidative evolution. At the heart of the estate’s identity is its unparalleled mastery of Pedro Ximénez, not only as a dry table wine, but as one of the world’s greatest dessert wines — aged in solera for decades to produce unctuous, complex, endlessly layered wines.
The wines are refined, sun-drenched, and composed. Fino CB is dry and almond-edged, with sea salt, chamomile, and chalk. Amontillado shows roasted hazelnut, dried citrus, and oxidative lift, while Oloroso Asunción brings warmth, fig, and walnut richness. Pedro Ximénez Solera 1927, the estate’s most iconic dessert wine, is dark, silken, and endless — raisin, espresso, orange peel, and balsamic depth over a finish that never truly leaves. Each wine carries the signature of place: sun, white earth, and time.
